Ingredients
Filling
- ½ lb 96% lean ground beef or 99% lean ground turkey (0–2 pts total)
- 1 tbsp low-sodium taco seasoning (0 pts)
- ½ cup canned black beans, rinsed (optional – ~1 pt total)
- ½ cup fat-free shredded cheddar (2 pts total)
- ½ cup diced tomatoes or salsa (0 pts)
- Optional: chopped green onions or bell pepper (0 pts)
Pocket Options
- 4 low-carb tortillas (Ole Xtreme Wellness, 1 pt each)
OR - 2-ingredient dough (non-fat Greek yogurt + self-rising flour, ~2 pts per pocket)
Instructions
- Cook meat in a skillet over medium heat until browned.
- Add taco seasoning and a splash of water; simmer 2–3 minutes until thick.
- Stir in beans (if using) and tomatoes or salsa. Remove from heat.
- Mix in cheese and any optional vegetables. Let cool slightly.
- Place filling in the center of tortillas (or dough circles).
- Fold over, seal edges with a fork, and lightly spray with cooking spray.
- Bake: 375°F (190°C) for 15–20 minutes, until golden
