WW Cheese-Crusted “Fritters” (Light & Crispy!)

Crispy, cheesy, and totally satisfying — but made lighter! These WW-friendly cheese fritters skip the deep fryer and keep all the flavor, crunch, and gooey cheese goodness you crave.

🧂 Ingredients:

  • 2 medium potatoes (instead of fried apples) or zucchini, grated and patted dry
  • 1 tsp olive oil spray (for crisping)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp fresh cilantro, finely chopped
  • ½ cup light mozzarella cheese, shredded
  • 1 cup crushed corn flakes (lightly crushed for coating)
  • 1 egg white (for binding)

👩‍🍳 Instructions:

Step 1 — Prep the Base (5 min)
In a bowl, mix grated potatoes (or zucchini) with salt, pepper, and cilantro. Pat with paper towels to remove excess moisture.

Step 2 — Add Cheese (2 min)
Stir in light mozzarella and the egg white. Mix until evenly coated.

Step 3 — Coat in Crunch (2 min)
Form small fritters (like nuggets or patties). Roll each one lightly in crushed corn flakes.

Step 4 — Bake or Air Fry (15–20 min)
Place on parchment-lined tray. Spray lightly with olive oil.

  • Air fryer: 400°F (200°C) for 12–15 minutes
  • Oven: 425°F (220°C) for 20 minutes, flipping halfway

Step 5 — Serve (and enjoy warm!)
Serve with a side of zero-point Greek yogurt dip or light marinara sauce.

  • Want more flavor? Add a pinch of garlic powder or smoked paprika.
  • Use zucchini for fewer points and a lighter texture.
