🧂 Ingredients:
- 2 medium potatoes (instead of fried apples) or zucchini, grated and patted dry
- 1 tsp olive oil spray (for crisping)
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp fresh cilantro, finely chopped
- ½ cup light mozzarella cheese, shredded
- 1 cup crushed corn flakes (lightly crushed for coating)
- 1 egg white (for binding)
👩🍳 Instructions:
Step 1 — Prep the Base (5 min)
In a bowl, mix grated potatoes (or zucchini) with salt, pepper, and cilantro. Pat with paper towels to remove excess moisture.
Step 2 — Add Cheese (2 min)
Stir in light mozzarella and the egg white. Mix until evenly coated.
Step 3 — Coat in Crunch (2 min)
Form small fritters (like nuggets or patties). Roll each one lightly in crushed corn flakes.
Step 4 — Bake or Air Fry (15–20 min)
