WW Blueberry Crumb Bars (Lower-Point Version)

These bars are my “coffee break lifesavers.” My husband thinks they taste like bakery squares, and he has zero idea they’re WW-light. Soft, jammy blueberries + a golden oat crumble = perfection.

🥣 Ingredients (Lightened WW Version)

🔹 Crust & Crumb Topping

  • 1 cup white whole wheat flour — 11 points
  • ½ cup quick oats (instead of rolled)same texture, slightly lower density4 points
  • 3 tbsp light butter (instead of 4 tbsp) — 4 points
  • ¼ cup monk fruit sweetener — 0 points
  • ½ tsp baking powder
  • ½ tsp vanilla extract
  • Pinch of salt

🔹 Blueberry Filling

  • 1 ½ cups blueberries (fresh or frozen) — 0 points
  • 2 tsp cornstarch (instead of 1 tbsp)0 points
  • 1 tbsp lemon juice — 0 points
  • 1–2 tbsp monk fruit sweetener — 0 points
  • Optional: ½ tsp cinnamon or lemon zest

👩‍🍳 Instructions

  1. Prep the Pan
    Preheat oven to 350°F (175°C). Line an 8×8 baking pan with parchment.
  2. Make the Crust & Crumble
    Combine flour, oats, baking powder, salt, and monk fruit.
    Add melted light butter + vanilla and stir until crumbly.
    Press 2/3 into the bottom of the pan. Reserve the rest.
  3. Make the Filling
    Toss blueberries with lemon juice, cornstarch, and sweetener.
    Spread evenly over the crust.
  4. Top & Bake
    Sprinkle the remaining crumble mixture on top.
    Bake 30–35 minutes until golden and bubbly.
  5. Cool Completely
    Cooling helps the bars set and slice cleanly.
    Cut into 12 bars.
