Ingredients:

  • Cooking spray or a little olive oil (to grease the pan)
  • 6 large eggs
  • 2 slices center-cut bacon or lean turkey bacon, chopped
  • 2 tbsp reduced-fat cheddar cheese
  • 1–2 tbsp chopped green onions
  • Salt and pepper to taste
  • Optional: sprinkle of herbs (parsley, dill, or basil)

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Lightly grease a muffin pan with cooking spray or brush with a tiny bit of olive oil.
  3. Crack one egg into each muffin cup.
  4. Top with bits of bacon or ham, cheese, green onions, and herbs.
  5. Bake for 15 minutes — the eggs will be perfectly set, not runny and not rubbery.
