WW Apple Broccoli Salad

Crisp, crunchy, and slightly sweet — this salad is a fresh, light, and satisfying side or snack!

Ingredients (4 servings, ~1 cup each):

  • 2 cups broccoli florets (0 pts)
  • 1 large apple, diced (0 pts)
  • ¼ cup red onion, thinly sliced (0 pts)
  • ¼ cup dried cranberries (6 pts, optional)
  • ¼ cup sunflower seeds, lightly toasted (4 pts)

Dressing:

  • ¼ cup Greek yogurt, plain (full-fat or low-fat) (2 pts)
  • 1 Tbsp honey (1 pt)
  • 1 Tbsp lemon juice (0 pts)
  • Salt & pepper to taste (0 pts)

Instructions:

  1. Prep the Veggies & Fruit: Chop broccoli into small florets. Peel and thinly slice broccoli stems if desired. Dice the apple. Thinly slice the red onion (soak in ice water for 5 min for milder flavor).
  2. Make Dressing: Whisk Greek yogurt, honey, lemon juice, salt, and pepper until smooth.
  3. Combine Salad: In a large bowl, toss broccoli, apple, red onion, cranberries, and sunflower seeds. Pour dressing over top and gently mix.
  4. Chill & Serve: Let salad sit in the fridge for 10 minutes before serving to allow flavors to meld.
