So here’s the comeback version: same stretchy cheese pull, same golden crunch — zero oil splatter.
Ingredients

- 10 oz light mozzarella string cheese (10 sticks)
- ½ cup all-purpose flour
- 2 eggs
- ¼ cup skim milk
- ¾ cup seasoned bread crumbs (whole wheat or light if possible)
- ½ tsp cayenne pepper (optional, for a little kick)
- Olive oil or zero-calorie cooking spray
Instructions
- Cut string cheese into bite-sized pieces.
- In a bowl, whisk together eggs and milk.
- Prepare your dredging setup: one bowl with flour, one with egg mixture, one with bread crumbs.
- Coat each cheese piece — first in flour, then in egg, then in bread crumbs.
(For an extra-crispy shell, you can repeat the egg + breadcrumb step once more.) - Place the coated bites on a plate and freeze for 20–30 minutes — this prevents melting during cooking.
- Preheat your air fryer to 380°F (195°C).
- Lightly spray the basket with cooking spray and arrange the cheese bites in a single layer.
- Air fry for 5–6 minutes, shaking halfway through, until golden and crispy.
- Serve immediately with sugar-free marinara sauce or light ranch dip.
