🛒 Ingredients

  • 2 cups rolled oats – 4 SP
  • 1 medium zucchini, grated – 0 SP
  • 2 ripe bananas, mashed – 0 SP
  • ¼ cup unsweetened applesauce – 0 SP
  • ¼ cup almond milk (or any milk) – 0 SP
  • 2 tbsp maple syrup (or sweetener of choice) – 2 SP
  • 1 tsp vanilla extract – 0 SP
  • 1 tsp ground cinnamon – 0 SP
  • ½ tsp baking powder – 0 SP
  • Pinch of salt – 0 SP

Optional toppings: sliced banana, berries, chopped nuts, or drizzle of extra maple syrup


👩‍🍳 Instructions

1️⃣ Preheat oven to 350°F (175°C). Grease a baking dish lightly with non-stick spray or line with parchment.

2️⃣ In a large bowl, combine oats, grated zucchini, mashed bananas, applesauce, almond milk, maple syrup, vanilla, cinnamon, baking powder, and salt. Mix until fully combined.

3️⃣ Pour mixture into prepared baking dish and spread evenly.

4️⃣ Add optional toppings if desired.

5️⃣ Bake for 25–30 minutes, or until set and lightly golden on the edges.

6️⃣ Let cool slightly, then slice into squares or rectangles. Serve warm, or cool completely and store in an airtight container for easy grab-and-go breakfasts.
