Ultra-Low-Point Keto Musketeer Bars”

🥣 Ingredients (Makes 10 bars)

  • 1/2 cup unsweetened almond butter – 8 points total
  • 1 tsp vanilla extract – 0 points
  • 1 tbsp coconut oil or cooking spray – 1–2 points (spray = 0 points)
  • 2 tbsp heavy cream – 1 point
  • 2 tbsp powdered erythritol (or any keto-friendly sweetener) – 0 points
  • 1/4 cup sugar-free chocolate chips – 2 points
  • Pinch of salt

(Tip: For even lower points, you can make a thin chocolate layer with unsweetened cocoa powder instead of chocolate chips.)


🔥 Instructions

  1. Heat coconut oil in a small saucepan over low heat (or spray a pan).
  2. Whisk in heavy cream, almond butter, vanilla, erythritol, and a pinch of salt until smooth and creamy.
  3. Line a baking sheet with parchment and spread the mixture into a smooth layer.
  4. Chill in the fridge for 1 hour until firm.
  5. Cut into bars.
  6. Coat each bar with melted sugar-free chocolate chips or a thin cocoa powder glaze.
  7. Chill for another 30 minutes to set.
