Ingredients (Makes 2 Servings)
For the Meatloaf:
- 3/4 lbs ground turkey โ 0 pts
- 1/4 cup cilantro, chopped โ 0 pts
- 2 eggs โ 0 pts
- 3 garlic cloves, minced โ 0 pts
- 1/4 cup onion, diced โ 0 pts
- 1 tsp olive oil โ 1 pt
- Salt & pepper to taste
For the Mashed Celery Root:
- 2 medium celery roots, peeled & chopped โ 0 pts
- <1/4 cup fat-free milk โ 0 pts
- 2 tbsp Smart Balance or light butter โ 1 pt
- Salt & pepper to taste
For the Topping:
- 1 tbsp low-sugar BBQ sauce โ 1 pt
Vegetable Side:
- 1 can peas, drained and seasoned with salt & pepper โ 0 pts
Instructions
- Preheat oven to 350ยฐF (175ยฐC).
- In a bowl, combine ground turkey, eggs, garlic, onion, cilantro, salt, and pepper. Mix well.
- Shape into a loaf and place in a baking dish. Brush the top with 1 tbsp BBQ sauce.
- Bake for 35โ40 minutes, until cooked through.
- While the meatloaf bakes, boil celery roots until tender. Mash with fat-free milk, Smart Balance, salt, and pepper.
- Serve half the meatloaf with mashed celery root and peas.
