WW-Friendly Cauliflower Bake (2–3 points total!)
Ingredients:
- 1 whole cauliflower (stem removed but kept whole) – 0 points
- ½ cup fat-free mayonnaise – 1 point
- ½ cup fat-free shredded cheddar – 1–2 points
- Spices: salt, pepper, paprika – 0 points
Instructions:
- Remove the stem from the cauliflower but keep it whole.
- Boil the cauliflower upside down for about 7–8 minutes (longer if you want it softer).
- Let it cool for a few minutes after boiling.
- Mix the fat-free mayo, fat-free cheese, and your favorite spices (like salt, pepper, paprika).
- Spread the mixture evenly over the cauliflower (use hands or a brush).
- Bake in the oven at 400°F (200°C) for about 20 minutes, or until golden and bubbly.
