These sweet potato pancakes are made with protein powder for that boost of protein, almost 7 grams per pancake!
Ingredients
- 1/3 cup sweet potato, cooked
- 1 large egg
- 1 scoop vanilla protein powder
- 1/4 teaspoon baking powder
- 1/2 teaspoon cinnamon
Instructions
- Put all ingredients in a blender, and blend thoroughly until smooth.
- Pour 1/4 cup batter onto a skillet and grill till cooked through as much as possible.
- Top with greek yogurt, nuts, syrup, chocolate, berries, whatever!
