Ingredients

  • 1 reduced-fat ready-made graham cracker crust – 12 points (whole crust)

For the Filling:

  • 4 cups fresh strawberries, hulled & halved – 0 points
  • ⅓ cup monk fruit sweetener (or other zero-calorie sweetener) – 0 points
  • 2 tbsp cornstarch – 2 points
  • ½ cup water – 0 points
  • 1 tbsp lemon juice – 0 points
  • Pinch of salt – 0 points

Optional Topping:

Instructions

  1. Prepare glaze: In a saucepan, whisk sweetener, cornstarch, water, and salt. Cook over medium heat, stirring until thickened and clear. Remove from heat, stir in lemon juice, and let cool slightly.
  2. Assemble pie: Place strawberries in the graham cracker crust. Pour cooled glaze evenly over berries.
