- 1 medium zucchini, sliced – 0 pts
- 1 cup mixed mushrooms (shiitake, oyster, or your fave) – 0 pts
- 2 cloves garlic, minced – 0 pts
- 2 tbsp low-sodium soy sauce – 0 pts
- 1 tsp sesame oil – 1 pt
- 1 tbsp oyster sauce (optional) – 1 pt
- Green onion & black sesame seeds – 0 pts
- 1 tsp olive oil (for cooking) – 1 pt
Total (for 1 serving): ~6 WW points
(You can lower to ~5 by skipping oyster sauce or using cooking spray instead of oil.)
🍽 How to Make It:
- Cook the rice according to package instructions (or prep in advance for easy assembly).
- In a nonstick skillet, sauté garlic and mushrooms in olive oil until they begin to soften (3–4 min).
- Add sliced zucchini and cook until just tender, another 3–4 min.
- Stir in soy sauce, sesame oil, and oyster sauce (if using). Cook 1–2 more min until everything’s coated and tasty.
- Plate it up: add your rice, pile on those veggies, sprinkle green onions and sesame seeds. Boom!
