๐Ÿ“ Ingredients:

  • 10โ€“12 oz cooked chicken breast (I used skinless rotisserie)
  • 1/2 cup canned artichoke hearts (in water), chopped
  • 1 cup low-fat cottage cheese, blended until smooth
  • 1/4 cup shredded Parmesan cheese
  • 1/4 cup shredded part-skim Mozzarella cheese
  • 1โ€“2 garlic cloves, minced
  • 1/2 cup frozen spinach, thawed and squeezed dry
  • Salt & pepper to taste

๐Ÿณ Instructions:

  1. Preheat oven to 400ยฐF (200ยฐC).
  2. Blend the cottage cheese until smooth in a blender or food processor.
  3. In a mixing bowl, combine shredded chicken, spinach, artichokes, blended cottage cheese, garlic, Parmesan, mozzarella, salt, and pepper.
  4. Spoon the mixture into individual oven-safe bowls or a small baking dish.
  5. Bake for about 10 minutes, or until the top is lightly golden and heated through.
  6. Serve warm with veggie sticks, crackers, or low-carb chips!
