Ingredients (per bowl):

  • 4 oz rotisserie chicken breast (skin removed)0 Points
  • ¼ cup fire-roasted corn1 Point
  • 2 tbsp black beans0.5–1 Point (depending on brand, rounded up to 1)
  • ½ cup diced tomatoes with green chilis0 Points
  • ¼ cup light shredded cheese1 Point
  • 2 tbsp salsa0 Points
  • 1 tbsp Bolthouse Farms ranch or similar light dressing0–1 Point

Total: ~3 WW Points per bowl

Instructions:

  1. In your container, layer chicken, corn, beans, tomatoes, and cheese.
  2. Top with salsa and ranch (or pack separately if meal prepping).
  3. Heat or eat cold — both ways are delicious!
