⭐ Ingredients (Makes 15 patties)
- 500g chicken breast mince
- 200g cooked sweet potato, mashed
- 1 medium red onion, finely chopped
- 2 cloves garlic, grated
- 2 tbsp fresh parsley, chopped (+ extra for topping)
- 2 tbsp fresh basil, chopped
- 1 egg
- 100g panko breadcrumbs
- 20g grated parmesan
- 2 tsp olive oil
- 2 tbsp light sweet chili sauce (for serving)
- Salt & pepper
🔥 Instructions
- In a large bowl, mix the chicken mince, mashed sweet potato, onion, garlic, parsley, basil, egg, breadcrumbs, parmesan, salt, and pepper.
- Scoop and shape the mixture into 15 small patties.
- Heat 1 tsp olive oil in a non-stick pan over medium heat.
- Cook half the patties about 5 minutes per side, until golden and cooked through.
- Repeat with the remaining 1 tsp oil and remaining patties.
- Serve with a little sweet chili sauce and sprinkle with extra parsley.
