Tonight’s dinner is bubbling away in the crockpot, and it smells incredible. This is one of those hearty, cozy meals that feels indulgent but is packed with lean protein, fiber, and volume — perfect for a big bowl without blowing your points.
Ingredients
- 2 lbs 99% lean ground turkey
- 1 can petite diced tomatoes, drained
- 1 can small white beans, rinsed and drained
- 1 can black beans, rinsed and drained
- 1 container cubed butternut squash
- 1 envelope chili seasoning
- ¼ cup taco sauce
- 1 cup no-salt-added beef broth
- Salt, pepper, garlic powder, onion powder — to taste
How It’s Made
- Brown the ground turkey in a skillet with salt, pepper, garlic powder, and onion powder.
- Transfer turkey to the crockpot.
- Add tomatoes, beans, butternut squash, chili seasoning, taco sauce, and broth.
- Stir well.
- Cook on LOW for 6–7 hours or HIGH for 3–4 hours, until squash is tender and flavors are blended.
- Taste and adjust seasoning if needed.
