Drizzled with Olive Oil – Quick & Easy Snack
Ingredients (makes 4 servings):
- 4 slices sourdough or rustic bread (about 40g each)
- 1 cup part-skim ricotta cheese (about 240g)
- 2 medium ripe tomatoes, sliced
- 2 tbsp olive oil
- 1 tsp sesame seeds
- 1/2 tsp flaky sea salt
- 1/4 tsp black pepper
- Fresh parsley or basil for garnish
- (Optional) 1 garlic clove for rubbing on toast
Instructions:
- Toast the bread slices until golden and crispy. Optionally rub with garlic.
- Mix ricotta with a pinch of salt and a drizzle of olive oil if desired.
- Spread ricotta on each slice of toast, then top with tomato slices.
- Drizzle olive oil over the top, sprinkle sesame seeds, sea salt, and black pepper.
- Garnish with fresh herbs.
- Serve warm, optionally with a salad or tea.
