Ingredients
- 4 cups diced cooked skinless chicken breast
- 1/4 cup minced red onion
- 1/4 cup minced celery
- 2 heaping tbsp chopped flat-leaf parsley
- 2 tbsp fresh lemon juice
- 2 tbsp light mayonnaise
- 2 tbsp nonfat plain Greek yogurt
- 2 tsp Dijon mustard
- Dash hot sauce (optional)
- Kosher salt & freshly ground black pepper, to taste
Instructions
- In a large bowl, combine chicken, red onion, celery, parsley, lemon juice, light mayo, Greek yogurt, Dijon mustard, and hot sauce.
- Mix well until chicken is evenly coated.
- Season to taste with salt and pepper.
- Cover and refrigerate until ready to serve. Perfect for sandwiches, lettuce wraps, or as a protein-packed salad topper.
