I made a batch of this last week, and it honestly felt like cheating — it sets up like real fudge but stays super light. The texture is soft, sweet, and peanut-buttery without blowing through your points.
⭐ Ingredients (16 pieces)
- 4 cups Swerve Confectioners (0 points)
(or real confectioners sugar, but that adds points) - 2 tbsp light butter, melted
- ⅓ cup unsweetened almond milk (0 points)
- 1 cup powdered peanut butter (PB2-style)
- Optional toppings: sea salt, crushed nuts, mini chocolate chips (adds points)
🍫 Instructions
- Line an 8×8 pan with parchment paper.
- In a microwave-safe bowl, mix Swerve (or sugar), melted butter, and almond milk.
- Microwave 2 minutes and stir until smooth.
- Mix in the powdered peanut butter until creamy.
- Spread into the pan and refrigerate 1–2 hours until firm.
- Slice into 16 squares and keep refrigerated.
🔢 WW Points (Unified System)
Using Swerve + powdered peanut butter + light butter:
➡️ 14 points for the whole batch
➡️ 1 point per square
(If using real confectioners sugar, points increase.)
