Peanut Butter Fudge Squares (Low-Point!)

I made a batch of this last week, and it honestly felt like cheating — it sets up like real fudge but stays super light. The texture is soft, sweet, and peanut-buttery without blowing through your points.


⭐ Ingredients (16 pieces)

  • 4 cups Swerve Confectioners (0 points)
    (or real confectioners sugar, but that adds points)
  • 2 tbsp light butter, melted
  • ⅓ cup unsweetened almond milk (0 points)
  • 1 cup powdered peanut butter (PB2-style)
  • Optional toppings: sea salt, crushed nuts, mini chocolate chips (adds points)

🍫 Instructions

  1. Line an 8×8 pan with parchment paper.
  2. In a microwave-safe bowl, mix Swerve (or sugar), melted butter, and almond milk.
  3. Microwave 2 minutes and stir until smooth.
  4. Mix in the powdered peanut butter until creamy.
  5. Spread into the pan and refrigerate 1–2 hours until firm.
  6. Slice into 16 squares and keep refrigerated.
