Peanut Butter Mini Muffins (WW-Friendly)


Ingredients (Makes 12 mini muffins):

  • ยฝ cup PB2 (powdered peanut butter), mixed with water โ€” 1 point
  • 2 tbsp creamy peanut butter (optional, adds richness) โ€” 6 points
  • ยผ cup unsweetened applesauce โ€” 0 points
  • ยผ cup zero-calorie sweetener (monk fruit or stevia blend) โ€” 0 points
  • 1 egg โ€” 0 points
  • ยฝ tsp vanilla extract โ€” 0 points
  • ยฝ cup almond flour or oat flour โ€” 4 points
  • ยผ tsp baking soda
  • ยผ tsp salt
  • 2 tbsp mini chocolate chips (sugar-free like Lilyโ€™s or semi-sweet) โ€” 3 points

Instructions:

  1. Preheat oven to 350ยฐF (175ยฐC). Lightly grease or line a mini muffin tin.
  2. In a bowl, whisk together PB2, peanut butter (if using), applesauce, egg, sweetener, and vanilla.
  3. Stir in almond or oat flour, baking soda, and salt. Fold in chocolate chips.
  4. Spoon batter into 12 mini muffin cups (~1 tbsp each).
  5. Bake 10โ€“12 minutes until edges are golden and centers are set.
  6. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
