🧾 Ingredients:
For the Peaches:
- 1 can (29 oz) peaches in juice, drained
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tbsp zero-calorie sweetener (like monk fruit or stevia)
For the Cake:
- 1/2 cup light butter (like Smart Balance)
- 1 cup zero-calorie sweetener
- 3 eggs
- 1 1/2 cups white whole wheat flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 3/4 cup unsweetened almond milk
- 1 tbsp vanilla extract
👩🍳 Instructions:
- Mix peaches with cinnamon, nutmeg & sweetener.
- Preheat oven to 350°F (175°C). Grease a loaf or bundt pan.
- Cream light butter & sweetener. Add eggs one at a time, then vanilla.
- Mix dry ingredients in a bowl.
- Add flour mix & almond milk into wet batter, alternating.
- Layer half of the batter, then half the peaches. Repeat.
- Bake for 50–60 minutes. Let cool before slicing.
