Ingredients
For the Chicken (2 WW Points):
- 1 skinless chicken breast
- 1 tbsp grated Parmesan cheese
- 1 tbsp seasoned breadcrumbs
- 1 tsp parsley
- ½ tsp paprika
- ½ tsp garlic powder
- Black pepper to taste
- Cooking spray or air fryer
For the Stuffing (3 WW Points):
- ½ cup Stove Top Low Sodium Chicken Stuffing (prepared)
- 1 tbsp I Can’t Believe It’s Not Butter (ICBINB)
For the Veggie Side (0 WW Points):
- ½ cup mushrooms
- Small spoonful of corn
- Nonstick spray or a splash of broth
Cucumber Tomato Salad (1 WW Point):
- ½ cup sliced cucumbers
- ½ cup chopped tomatoes
- 1 tbsp light dressing of your choice (1 pt)
👩🍳 Instructions
- Prep the Chicken:
- Preheat oven (or air fryer) to 400°F (200°C).
- In a small bowl, mix Parmesan, breadcrumbs, parsley, paprika, garlic powder, and pepper.
- Coat both sides of the chicken breast with the mixture.
- Lightly spray with cooking spray.
- Bake for 20–25 minutes (or air fry for ~15 mins), until cooked through and golden.
- Make the Stuffing:
- Prepare ½ cup Stove Top stuffing according to package instructions.
- Stir in 1 tbsp of ICBINB while hot to melt and flavor.
- Sauté the Veggies:
- In a nonstick skillet, lightly cook mushrooms with spray oil or broth until tender.
- Add corn at the end and stir to combine. (Keep portion small to stay at 0 pts)
- Salad Time:
- Toss cucumbers and tomatoes in a bowl.
- Add 1 tbsp light dressing and mix well.
