🧀 Ingredients
Cheesecake Filling
- 2 cups non-fat Greek yogurt
- 1 small box sugar-free cheesecake or vanilla pudding mix
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- Optional: low-cal sweetener, to taste
- Optional: 1 tsp gelatin + 2 tbsp warm water (firmer set)
Light Crust
- 1½ cups crushed light graham crackers
- ¼ cup light butter OR light coconut oil, melted
Cherry Topping
- 1 can sugar-free cherry pie filling
- Optional: fresh cherries for garnish
🥣 Instructions
- Make the crust
Mix crushed graham crackers with melted butter until it looks like damp sand. Press firmly into a 9-inch pan. Chill while you prep the filling. - Mix the filling
In a bowl, stir yogurt, pudding mix, vanilla, and lemon juice until smooth.
Want it firmer? Stir in the dissolved gelatin. - Assemble
Spread the filling evenly over the crust and smooth the top. - Chill
Cover and refrigerate at least 4 hours (overnight is even better). - Top & serve
Spread cherry filling on top, slice into 12 pieces, and enjoy calmly… or not 😄
