Mini Blueberry Cobbler (WW Low Point Version)

These taste like warm bakery cobbler but come out of a muffin tin… which makes it way too easy to say “I’ll just have one more.” 😅

🧺 Ingredients

  • 2 cups blueberries (fresh or frozen)
  • 1 tbsp lemon juice
  • 1 tbsp monkfruit or stevia sweetener
  • 1 box sugar-free yellow cake mix
  • 1 can diet lemon-lime soda (Sprite Zero / 7-Up Zero)
  • Optional: cinnamon

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C).
  2. Lightly spray a 12-cup muffin tin.
  3. Toss blueberries with lemon juice and sweetener.
  4. Divide blueberry mixture evenly into muffin cups.
  5. Sprinkle dry cake mix over each cup (about 2 tbsp each).
  6. Slowly drizzle soda over each one — just enough to moisten the mix (not soupy).
  7. Optional: sprinkle a little cinnamon on top.
  8. Bake 15–20 minutes until tops are lightly golden and set.
  9. Let cool slightly — they firm up as they sit.
