Lighter Turtle CandiesDeliciously rich but with fewer points!
Ingredients:
- 32 pecan halves
- 6 oz sugar-free caramel squares (or low-point caramel)
- 6 oz dark chocolate chips (70% cocoa or higher)
- 1 tablespoon water
- Parchment paper or silicone baking mat
Instructions:
- Line a baking sheet with parchment paper or a silicone mat. Arrange pecans in groups of four to look like little turtles.
- Melt the caramel squares with 1 tablespoon of water in the microwave, heating in 30-second bursts and stirring until smooth. Let it cool slightly but stay pourable.
- Spoon a bit of the melted caramel onto each pecan cluster to hold them together. Let set for about 10 minutes.
- Melt the dark chocolate chips in the microwave, stirring every 30 seconds until smooth.
- Spoon the chocolate over the caramel clusters and swirl gently with a toothpick or spoon if you want.
- Let candies cool at room temperature or in the fridge until firm. Then gently peel them off the paper or mat.
Points: About 5.5 points per candy (makes 8 candies)
