Ingredients (makes 4 servings):

  • 1 cup shredded light mozzarella – 4 Points total (~1 per serving)
  • 1 cup grated reduced-fat Parmesan – 6 Points total (~1.5 per serving)
  • 2 large eggs – 0 Points (if eggs are 0 on your plan)
  • 1 tsp Italian seasoning – 0 Points
  • 8 slices turkey pepperoni – 1 Point total (~0.25 per serving)
  • Optional: 2 tbsp zero sugar pizza sauce – 0–1 Point

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. Mix the cheeses, eggs, and seasoning together in a bowl.
  3. Spread on a parchment-lined baking sheet.
  4. Top with turkey pepperoni slices.
  5. Bake for about 20–25 minutes, or until golden and firm.
  6. Cut into 4 pieces. Serve warm with optional pizza sauce.
