🧂 Ingredients:
- 4 medium potatoes, unpeeled – 6 points
- Cooking spray (instead of oil) – 0 points
- 1 cup low-sodium chicken broth – 1 point
- 1 tbsp light butter – 2 points
- 2 tbsp fat-free sour cream – 0 points
- Chopped chives – optional, 0 points
- Salt and pepper – to taste – 0 points
🔥 Instructions:
- Wash and halve the potatoes (don’t peel). Spray with a little cooking spray.
- Boil them in a mix of chicken broth and water with a pinch of salt until soft.
- Drain, saving a little broth. Mash the potatoes with skins on using the reserved broth, light butter, and sour cream.
- Season with pepper and garnish with chives if you like.
