Lightened-Up Broccoli & Cheddar Stuffed Chicken

A cheesy, flavorful dinner that’s low-carb and WW-friendly!

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 ½ cups broccoli florets, chopped
  • ½ cup reduced-fat shredded cheddar cheese
  • 3 tbsp fat-free cream cheese, softened
  • ¼ cup plain nonfat Greek yogurt (instead of sour cream)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt & pepper, to taste
  • 1 tsp olive oil (or cooking spray)
  • 2 tbsp grated Parmesan cheese (optional)

Instructions:

  1. Prep Broccoli: Steam or microwave until tender (about 2–3 min). Chop finely.
  2. Make Filling: In a bowl, mix broccoli, cheddar, cream cheese, yogurt, garlic powder, onion powder, salt & pepper.
  3. Prep Chicken: Slice a pocket in each breast. Season with salt, pepper, and extra spices if desired.
  4. Stuff: Fill each pocket with broccoli mixture. Secure with toothpicks if needed.
  5. Cook: Heat olive oil (or spray) in an oven-safe skillet. Sear chicken 3–4 min per side until golden. Sprinkle with Parmesan if using.
  6. Bake: Transfer skillet to oven at 375°F (190°C) for 15–20 min, or until chicken reaches 165°F (75°C).
  7. Serve: Rest a few minutes before slicing. Enjoy with roasted veggies or a salad!
