Light Raspberry Cheesecake Mousse (WW-Friendly)

Creamy, fruity, sugar-free & only ~3–4 WW Points per serving!
Yields: 6 servings (4 oz cups)


📝 Ingredients:

  • 8 oz light cream cheese (Neufchâtel or reduced-fat) – 8 Points
  • ½ cup heavy cream13 Points
  • ½ cup unsweetened almond milk (or Fairlife skim milk)0–1 Point
  • ½ cup Swerve confectioners sugar0 Points
  • 1 cup frozen raspberries, thawed and drained – 0 Points
  • 1 tsp vanilla extract0 Points

🍴 Instructions:

  1. In a mixing bowl, beat the light cream cheese until smooth and fluffy.
  2. Add the Swerve and continue beating until well combined.
  3. Mix in the thawed and drained raspberries and vanilla extract.
  4. Slowly add the heavy cream + almond milk mixture, and beat for 3–4 minutes until light and whipped.
  5. Divide evenly into 6 small containers (about 4 oz each).
  6. Chill in the fridge for at least 1 hour before serving.
