Light Pumpkin Soup (WW-Friendly)

Ingredients:

  • 2 kg Kent pumpkin – 0 pts
  • 1 kg butternut pumpkin – 0 pts
  • 2 large carrots – 0 pts
  • 1 medium sweet potato – 4 pts
  • 2 large white potatoes – 6 pts
  • 150 g turkey bacon (lower fat) – 6 pts
  • 1 large brown onion – 0 pts
  • 1 tbsp brown sugar or substitute with 1 tsp erythritol – 0–3 pts
  • 2 cloves garlic – 0 pts
  • 1 tbsp olive oil (instead of butter) – 4 pts
  • 1 L low-sodium chicken stock – 0 pts
  • 1 cup light cream + 1 cup unsweetened almond milk – 6 pts

👩‍🍳 Instructions:

  1. Roast pumpkin, carrots, sweet potato, and potatoes with salt, pepper, and nutmeg as usual.
  2. Cook turkey bacon and onion with brown sugar or erythritol and garlic in olive oil.
  3. Put everything in slow cooker with stock, cook on high 5 hours.
  4. Blend with stick blender, add cream and almond milk, cook another hour on low.
