Light & Cheesy  Jalapeño Buns

Soft, cheesy, and lightly spicy — a perfect low-carb snack or side!

Servings: 6

Ingredients:

Dough:

  • 2 cups shredded mozzarella
  • 2 oz cream cheese
  • 1 large egg
  • 1 cup almond flour
  • 1 tsp baking powder
  • ½ tsp garlic powder
  • Pinch of salt

Topping:

  • ½ cup shredded cheddar or mozzarella
  • 2 jalapeños, sliced
  • 1 tbsp cream cheese (optional filling)

Instructions:

  1. Prepare Dough: Melt mozzarella and cream cheese in microwave 45–60 sec. Stir smooth. Add egg, almond flour, baking powder, garlic powder, and salt. Mix into dough. Chill 5 min if sticky.
  2. Shape Buns: Divide dough into 6 pieces, shape into rounds, slightly flatten. Optional: stuff with cream cheese. Place on baking tray.
  3. Top & Bake: Sprinkle cheese and jalapeños on top. Bake at 375°F (190°C) for 15–18 min until golden.
  4. Serve: Cool 5 min, then enjoy warm.

Tips:

  • Add chili flakes for extra spice.
  • Swap coconut flour for almond flour (⅓ cup) if preferred.
