Jalapeño Popper Bites

Makes ~20 bites | ~2 WW Points each


Ingredients:

  • 6 oz light cream cheese, softened — 9 points
  • 2 fresh jalapeños, diced (seeds removed for less heat) — 0 points
  • 1/4 cup turkey bacon bits3 points
  • 1 1/2 cups part-skim shredded mozzarella12 points
  • 1/4 tsp garlic powder0 points
  • 1/4 tsp onion powder0 points
  • 1 1/2 cups finely crushed pork rinds8 points
  • 2 large eggs0 points
  • 1 tbsp heavy cream1 point

Instructions:

  1. Mix filling:
    Combine light cream cheese, diced jalapeños, turkey bacon bits, shredded mozzarella, garlic powder, onion powder in a bowl.
  2. Chill:
    Refrigerate the mixture 20–30 min for easier handling.
  3. Prepare coating:
    Whisk eggs with heavy cream in one bowl; place crushed pork rinds in another.
  4. Form balls:
    Scoop cheese mixture and roll into bite-sized balls.
  5. Coat bites:
    Dip balls into egg mixture, then roll in pork rind crumbs. Repeat for a double coating.
  6. Cook:
    Air fry at 400°F (200°C) for 12 minutes, flipping halfway. Spray bites lightly with cooking spray before and during cooking.
  7. Serve:
    Let cool a few minutes. Serve warm with ranch or sour cream dip.
