🧁 Ingredients:
- 1 egg — 0 points
- 2 tbsp unsweetened cocoa powder — 0 points
- 2 tbsp monk fruit or erythritol sweetener — 0 points
- ¼ tsp baking powder — 0 points
- ½ tsp vanilla extract — 0 points
- 1 tbsp unsweetened almond milk (instead of heavy cream) — 0 points
For the light frosting:
- 2 tbsp light cream cheese — 1 point
- 1 tbsp monk fruit sweetener — 0 points
- A dash of vanilla extract — 0 points
🍽 Instructions:
- Whisk egg, cocoa, sweetener, baking powder, vanilla, and almond milk until smooth.
- Heat mini waffle maker and pour in half the batter. Cook ~3 min.
- Repeat with the rest of the batter.
- For frosting: mix light cream cheese, sweetener, and vanilla until fluffy.
- Spread between the cooled chaffles and enjoy your guilt-free dessert sandwich!
