Grilled Steak Tacos with Avocado Salsa (WW Style)

Ingredients:

For the Salsa Verde:

  • 1 tbsp avocado oil
  • 1 lb tomatillos, husks removed and rinsed
  • ยฝ yellow onion
  • 2 cloves garlic
  • 1 jalapeรฑo, seeds removed (for mild heat)
  • ยผ cup water
  • ยผ cup fresh cilantro
  • Juice of 1 lime (about 2 tbsp)
  • ยฝ tsp dried oregano
  • ยฝ tsp kosher salt, or to taste
  • ยฝ ripe avocado (use half to reduce points)

For the Grilled Steak:

  • 16 oz lean skirt, flank, or flap steak (trimmed of fat)
  • Juice of 1 orange (about ยผ cup)
  • Juice of 1 lime (about 2 tbsp)
  • ยฝ cup chopped fresh cilantro, divided
  • 1 tsp paprika
  • 1 tsp kosher salt
  • 1 tsp onion powder
  • ยฝ tsp black pepper
  • ยฝ tsp smoked paprika
  • ยฝ tsp ground cumin
  • ยฝ tsp dried oregano
  • 1 tbsp avocado oil
  • 6 green onions
  • 6 small corn tortillas (about 2 WW points each)
  • ยผ cup finely chopped white onion (for garnish)

Instructions:

  1. Make the Salsa Verde:
    Heat avocado oil in a pan over medium heat. Add tomatillos, onion, garlic, and jalapeรฑo, cooking until lightly charred. Add water and simmer until liquid reduces by about ยผ and tomatillos are tender (~3 minutes).
    Transfer to a blender, add cilantro, lime juice, oregano, salt, and half the avocado. Blend until smooth or chunky as you like. Refrigerate until serving.
  2. Marinate the Steak:
    In a bowl, mix steak with orange juice, lime juice, half the cilantro, paprika, salt, onion powder, black pepper, smoked paprika, cumin, and oregano. Toss well and refrigerate for 1 to 6 hours.
  3. Cook the Steak and Green Onions:
    Heat avocado oil in a grill pan or skillet over medium-high heat. Grill steak and green onions until well seared and steak reaches medium-rare (about 4 minutes per side). Remove and let rest 6 minutes. Slice steak into small pieces; leave green onions whole.
  4. Warm the Tortillas:
    Heat tortillas on grill or skillet about 10โ€“15 seconds per side.
  5. Assemble the Tacos:
    Place steak on tortillas, top with avocado salsa, garnish with chopped white onion and remaining cilantro. Serve with grilled green onions and lime wedges.
