Fun Pancake Poppers

These little pancake bites are colorful, fun, and surprisingly light. Kodiak mix adds protein, Fruity Pebbles bring the crunch, and a drizzle of sugar-free syrup ties it all together. Perfect for a quick breakfast or sweet snack.


⭐ Ingredients

  • 1–1½ cups Kodiak Cakes pancake mix
  • ¾ cup water (adjust as needed)
  • 1 cup Fruity Pebbles
  • Sugar-free maple syrup, for serving
  • Cooking spray

🥣 Instructions

  1. Preheat oven to 350°F (175°C). Spray a mini muffin tin.
  2. Whisk Kodiak mix and water until smooth and thick.
  3. Fold in ½ cup Fruity Pebbles, saving the rest for topping.
  4. Fill each mini muffin cup about ¾ full.
  5. Add a pinch of Fruity Pebbles on top of each.
  6. Bake 10–12 minutes, until golden and cooked through.
  7. Cool slightly and remove from the tin.
  8. Drizzle with sugar-free syrup.
