WW Cucumber & Tomato Salad 🍅

Ingredients:
- 2 cucumbers, peeled and sliced
- 1 red onion, sliced into rings
- ½ pint cherry tomatoes, halved
- ⅓ cup white vinegar
- 2 tsp oil (light or olive)
- ⅔ cup water
- 2 tsp sugar substitute or a small amount of sugar
- Salt & pepper, to taste
Directions:
- Prep the veggies: Slice cucumbers, red onion, and cherry tomatoes.
- Make the dressing: In a small bowl, mix vinegar, oil, water, sugar substitute, salt, and pepper.
- Combine: Pour the dressing over the vegetables and toss well.
- Chill: Refrigerate for about 1 hour before serving.
