Ingredients (for 1 sandwich):

  • 1 hard-boiled egg (2-3 WW points)
  • 1 teaspoon light mayo (0-1 WW point)
  • 1 slice low-fat cheese (e.g., 1% mozzarella or Swiss, 1-2 WW points)
  • 1-2 leaves of romaine or spinach (0 points)

Instructions:

  1. Cut the hard-boiled egg in half.
  2. Spread a small amount of light mayo on one half.
  3. Add the cheese slice and the romaine or spinach leaves.
  4. Top with the other half of the egg and secure with a toothpick.
