this Easy FOUR Bean Salad makes two large servings- each serving is two weight watchers points!
Ingredients
- 1Â can Garbanzos rinsed and drained
- 1/2Â can cannelloni beans rinsed and drained
- 1/2Â can red kidney beans rinsed and drained
- 1/2Â can black beans
- 1/2Â can Pinto beans rinsed and drained
- 1Â can quartered Artichoke hearts drained
- 6Â sliced Kalamata olives
- Red onion slices thin to taste
- Diced cucumber to taste
- 1/2Â small container qtrd cherry tomatoes
- Baby spinach..washed and pat dry..I julienned the spinach
- 2/3 cup fat free feta cheese
- Dressing:
- 1 Cup Red Wine Vinegar
- 1 tsp Italian seasoning
- 2 cloves garlic minced
- Small amount of red pepper flakes if desired
- Kosher or sea salt
- Black pepper
Instructions
- Combine beans with tomato cucumber, olives, onions olives and spinach.
- In a small mixer( I used my bullet) mix all dressing ingredients
- Toss salad with dressing and chill for 1 hour
