Ingredients
- 1 cup unsweetened cocoa powder
- ½ cup coconut oil
- ¼ cup powdered erythritol (or preferred sugar substitute)
- 1 tsp vanilla extract
- ½ tsp sea salt
- 2 cups mixed nuts (almonds, walnuts, pecans, or your favorite combo)
Instructions
- Prep baking sheet: Line with parchment paper.
- Melt coconut oil: In a small saucepan over low heat until liquid.
- Mix chocolate base: Whisk in cocoa powder and erythritol until smooth.
- Add flavor: Remove from heat, stir in vanilla extract and sea salt.
- Combine with nuts: Fold nuts into the chocolate mixture until evenly coated.
- Form clusters: Spoon or scoop small clusters onto the baking sheet, leaving space between them.
- Chill: Refrigerate for at least 30 minutes until firm.
- Serve or store: Enjoy immediately or keep in an airtight container.
