Current Favorite Zero-Point Lunch

My go-to zero-point lunch lately—so filling, fresh, and flavorful!

Ingredients (makes 1 serving):

  • Grilled chicken breast – 0 pts
  • 1 can chickpeas, drained & rinsed – 0 pts
  • 1 cucumber, chopped – 0 pts
  • 1/4 yellow onion, chopped – 0 pts
  • Handful of grape tomatoes, halved – 0 pts
  • 1/4 cup nonfat Greek yogurt – 0 pts
  • Dill, onion powder, garlic powder, salt & pepper – 0 pts
  • Optional: squeeze of lemon juice for brightness

Instructions:

  1. Chop veggies and combine in a bowl.
  2. Add chickpeas and grilled chicken.
  3. Mix in Greek yogurt and seasonings until everything is coated.
  4. Chill for a bit if you like, then enjoy!
