Crustless Pizza Bake

All the pizza flavor, none of the crust — and way fewer points.

This crustless pizza bake is pure comfort food without the heaviness. It’s cheesy, saucy, and packed with toppings, but skips the crust so you can enjoy a generous portion and stay on track. Perfect for busy weeknights, meal prep, or when a pizza craving hits hard.


Ingredients

  • 1 jar RAO’s marinara
  • 1 lb lean Italian chicken sausage or turkey sausage
    (regular pork sausage works, but raises points)
  • 3 cups part-skim mozzarella, shredded
  • 1 green bell pepper, chopped
  • Mushrooms, sliced
  • Onion, chopped

(Use any pizza toppings you love — olives, spinach, banana peppers, etc.)


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Pour ½ cup marinara into the bottom of a 9×13 baking dish.
  3. In a large bowl, mix:
    • Cooked sausage
    • Vegetables
    • 1 cup mozzarella
    • 1 cup marinara
  4. Spread mixture evenly into the baking dish.
  5. Sprinkle the remaining 2 cups mozzarella over the top.
  6. Bake for 20 minutes.
  7. Broil an additional 3–5 minutes until bubbly and lightly browned.
  8. Let rest 5 minutes, then serve.
