Ingredients
- 2 russet potatoes
- 1 tsp olive oil
- Sea salt
- Black pepper
- Garlic powder optional
Optional Low-Point Toppings
- Nonfat Greek yogurt
- Chives
- Reduced-fat cheese
- Turkey bacon bits
- Light butter spray
Instructions
1. Microwave First
Wash and dry the potatoes well.
Pierce each potato several times with a fork.
Microwave for about 5 minutes until slightly tender.
This helps speed everything up while still keeping the inside fluffy.
2. Season the Outside
Rub potatoes lightly with olive oil.
Sprinkle generously with:
- sea salt
- black pepper
- garlic powder if using
The oil and salt help create that super crispy skin.
3. Air Fry
Place potatoes into the air fryer.
Cook at 400°F (200°C) for about 12–15 minutes.
Flip halfway through cooking.
The outside should become deeply golden and crispy while the inside stays soft and fluffy.
4. Serve
Slice open carefully.
Fluff the inside with a fork.
Top however you like.
