Creamy Cucumber Salad (WW Zero–Low Point)

Ingredients

  • 3 baby cucumbers, thinly sliced
  • 1 small carrot, diced
  • 1 medium tomato, chopped
  • ¼ small red onion, thinly sliced
  • ½ cup non-fat plain Greek yogurt
  • 1 tbsp light mayonnaise (optional)
  • 1 tbsp apple cider vinegar or lemon juice
  • ½ tsp garlic powder (optional)
  • Salt & pepper, to taste
  • Fresh dill or parsley (optional)

Instructions

  1. Wash and prep all vegetables. Slice, dice, and add everything to a large bowl.
  2. In a small bowl, mix Greek yogurt, light mayo (if using), vinegar or lemon juice, garlic powder, salt, and pepper until smooth.
  3. Pour dressing over the veggies and gently toss until evenly coated.
  4. Chill 15–30 minutes if you want the flavors to really settle in.
  5. Garnish with fresh herbs and serve.
