🧺 Ingredients
- 2 cups cooked shredded skinless chicken breast
- 1 medium onion, finely diced
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 cup canned corn (optional)
- 1 can (14 oz / 400 g) diced tomatoes
- 3 cups low-sodium chicken broth
- 1 cup plain fat-free Greek yogurt
- 1–2 tsp chipotle in adobo sauce, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- Salt & pepper to taste
- Fresh lime juice (optional)
- Cilantro or scallions for topping
👩🍳 Instructions
1️⃣ In a large pot sprayed with cooking spray, sauté onion, garlic, and bell pepper over medium heat until softened (about 5 minutes).
2️⃣ Stir in cumin, smoked paprika, and chipotle. Cook 30 seconds to bloom the spices.
3️⃣ Add diced tomatoes, chicken broth, and corn (if using). Bring to a simmer.
4️⃣ Stir in shredded chicken. Simmer 10–15 minutes.
5️⃣ Lower heat and stir in Greek yogurt slowly so it blends smoothly.
6️⃣ Season with salt, pepper, and a squeeze of lime juice.
7️⃣ Serve hot with cilantro or scallions on top.
