Creamy Broccoli–Cauliflower Cheddar Soup (WW Low-Point Version)

It’s thick, cozy, and cheesy-looking — but made with light WW ingredients so you get the same creamy bowl without wasting your points. Perfect for cold evenings or when you want a filling, low-point comfort meal.


Ingredients (Lightened for WW)

Base

  • 1 tablespoon light butter (2 pts)
  • 1 small onion, chopped (0 pts)
  • 2 cups broccoli florets (0 pts)
  • 2 cloves garlic, crushed (0 pts)
  • 2 cups unsweetened almond milk (0 pts)
  • 2 cups cauliflower florets (0 pts)
  • 1 cup vegetable broth or chicken broth (0–1 pt depending on brand)
  • ¼ tsp black pepper (0 pts)
  • ¼ tsp paprika (0 pts)
  • ½ tsp salt (0 pts)

Cheese (WW-friendly upgrade)

  • ½ cup reduced-fat sharp cheddar, shredded (4 pts total)
    Still gives that melty, cheesy look but cuts points almost in half.

🥣 Instructions

  1. Chop broccoli, cauliflower, garlic, and onion.
  2. Melt light butter in a large pot over medium heat.
  3. Add onion + garlic and cook 3–4 minutes until soft and fragrant.
  4. Add broccoli & cauliflower; cook 2–3 minutes to blend flavors.
  5. Pour in broth and almond milk.
  6. Simmer 10–15 minutes until vegetables soften.
  7. Blend using an immersion blender until creamy and smooth.
  8. Add reduced-fat cheddar and stir until melted.
  9. Season with paprika, pepper, and extra salt if needed.
  10. Serve warm, optionally garnished with herbs or a tiny sprinkle of cheese.

💡 WW Tips

  • Use just ¼ cup cheese if you want each serving to drop closer to 2 points.
  • Add a splash of fat-free half-and-half (0 pts) if you like extra creaminess.
  • For a thicker texture, blend a bit less.
  • Add a pinch of nutmeg — it tastes like a restaurant soup and is 0 points.
