Cottage Cheese Date Ice Cream (WW Style)

Ingredients:

  • 16 oz low-fat or fat-free cottage cheese
  • 2 tablespoons honey (or sugar-free syrup)
  • ½ teaspoon vanilla extract
  • Pinch of sea salt
  • 6 dates, soaked if hard

Instructions:

  1. Blend cottage cheese, honey (or substitute), vanilla, and sea salt until smooth.
  2. Add dates and pulse until they’re broken up but still chunky.
  3. Freeze mixture in a bowl or loaf pan for 3–4 hours until firm.
  4. Serve and enjoy!
