Ingredients
- ½ cup fat-free cottage cheese – 0 points
- ¼ cup natural peanut butter (or powdered peanut butter mixed with water for lower fat) – 3 points
- 2 tbsp maple syrup or honey – 2 points
- ½ tsp vanilla extract – 0 points
- ½ cup almond flour (or oat flour) – 6 points
Optional Chocolate Shell:
- ½ cup sugar-free chocolate chips – 0 points
- 1 tsp coconut oil – 1 point
Instructions
- Blend: Add cottage cheese, peanut butter, maple syrup/honey, and vanilla to a blender. Blend until smooth.
- Mix: Transfer to a bowl and mix with almond flour until combined.
- Shape: Scoop mixture into balls (~10), place on a parchment-lined tray. Chill in freezer 10–15 min.
- Chocolate shell (optional): Melt chocolate chips and coconut oil in 30-sec intervals, stirring until smooth.
- Dip & top: Dip chilled balls into melted chocolate, place back on tray, sprinkle with flaky sea salt.
- Set: Freeze at least 30 min before serving.
