OR - crushed Fiber One bars pressed into rings
Cheesecake Filling
- 1 cup nonfat Greek yogurt
- 8 oz fat-free cream cheese
- 1 packet sugar-free cheesecake or chocolate pudding mix
- 1 tsp vanilla extract
- 2 tbsp sugar-free syrup or sweetener
Chocolate Topping
- 1/2 cup sugar-free chocolate chips
- 1 tsp coconut oil
Optional Toppings
- Sugar-free chocolate drizzle
- Crushed Fiber One crumbs
- Mini chocolate chips
Instructions
1. Make the Filling
In a bowl mix:
- cream cheese
- Greek yogurt
- pudding mix
- vanilla
- sweetener
Whip until thick, fluffy, and smooth.
The texture should look like chocolate mousse cheesecake filling.
2. Prepare the Base
Place rice cakes or pressed cereal bases onto parchment paper or a tray.
Spread or pipe large scoops of filling onto each base like the photo.
Freeze for about 20 minutes until slightly firm.
3. Melt the Chocolate
Microwave chocolate chips with coconut oil in short intervals until smooth.
Spoon chocolate over the tops.
Let some drip naturally down the sides for that bakery-style look.
4. Chill
Refrigerate or freeze until the chocolate hardens.
Serve cold.
