- 3 cups cooked shredded chicken breast – 0 Points
- 4 oz fat-free cream cheese – 3 Points
- 3/4 cup reduced-fat Pepper Jack cheese, shredded – 6 Points
- 1/2 cup salsa (no sugar added) – 0 Points
- 1 tsp cumin – 0 Points
- 1 tsp garlic powder – 0 Points
- 1 tsp onion powder – 0 Points
- 1 tsp chili powder – 0 Points
- 2 Tbsp lime juice – 0 Points
- 20 small low-carb or light tortillas (like Ole Xtreme Wellness or similar) – 20–25 Points total (~1–1.5 per tortilla)
Instructions:
- In a mixing bowl, stir together the cream cheese, salsa, spices, lime juice, chicken, and cheese.
- Spoon ~2 tablespoons of filling onto each tortilla and roll it up tightly.
- To cook now: Bake at 425°F (220°C) for 10–15 minutes until crisp.
- To freeze: Place taquitos on a tray to freeze, then transfer to a ziplock bag. Bake from frozen at 425°F for 17–22 minutes.
